Pierre-Henri uses organic principles 和 non-interventionist 葡萄酒making to draw out the unique character of his vineyards. The vineyards have a multitude of different soils, slopes 和 aspects. As such, Pierre-Henri has an ample vineyard palate to work with. And among his tools are 撒谎 maturation (aging with the 葡萄酒 in contact with the yeast lees) 和 the different fermentation 和 aging vessels he uses.
